Tomato soup is always a favorite in our house, and it will soon be a favorite in yours as well. Give this tomato soup recipe a try – you won’t be disappointed!
4 cups reduced-sodium chicken broth, “no-chicken” broth (see Note) or vegetable broth
½ cup half-and-half (optional)
½ teaspoon salt
Freshly ground pepper to taste
Heat butter and oil over medium heat in a Dutch Oven, until the butter is melted. Add celery and onion. Cook, stirring occasionally for about 4 to 6 minutes and onion and celery is softened. Add thyme (or parsley) and garlic. Cook, stirring until fragrant, about 10 seconds.
Next, add canned tomatoes, including juice, while stirring. Add broth, increase heat - bring to a lively simmer. Reduce heat to maintain the lively simmer and cook for 10 minutes.
Using an immersion blender, puree the soup in the pot. Alternatively you can blend the soup in batches in a blender. *Caution! It's hot and will burn - BE CAREFUL when using the immersion blender! If you're using half-and-half - stir that in. Add salt and pepper. Stir and you're done! Delicious Tomato Soup!
*You can make this recipe ahead of time. To preserve, cover and refrigerate for up to 4 days or freeze for up to 3 months.

Making Homemade Blender Peanut Butter is easier than you may think. First,
Remove shells and skins from peanuts.
Place ¼ of a cup of peanuts in blender and blend for 1 to 2 minutes or until finely chopped and just starting to cream.
Pour 1 table spoon of peanut or vegetable oil into the blender.
Blend until it turns into a runny liquid.
Start adding the remainder of the peanuts and blend until you've almost reached the consistency you desire for your homemade peanut butter.
Make sure to blend shy of your desired consistency. When you're peanut butter is almost at your desired consistency, add salt and sugar to taste and blend for another few seconds, until you've reached your desired consistency.
Just remove peanut butter from the blender and store in the refrigerator!

Today we celebrate National Margarita Day! Here is a wonderful recipe that will help you in your celebrations. This is an easy recipe for making a margarita. If you have ever wanted to try making a margarita, there’s no better day that National Margarita Day!
Pour ½-ounce of the tequila into a small saucer. Spread the kosher salt in a separate small saucer. Dip the rim of a martini or other wide rimmed glass into the tequila. Lift out of the tequila and hold upside down for 10 seconds to allow for slight evaporation. Next, dip the glass into the salt to coat the rim. Set aside.
Halve 2 of the limes, cut a thin slice for garnish from 1, and set aside. Juice the halved limes into the bottom of a Boston-style cocktail shaker. Cut the remaining 2 limes and the orange into quarters and add them to the juice in the shaker. Add the agave nectar to and muddle for 2 minutes until the juices are release. Strain the juice mixture through a cocktail strainer into the top of the shaker and discard the solids.
Return the juice to the bottom of the shaker, add the remaining 1½ ounces of tequila and any remaining on the saucer. Add the ice to the shaker, cover and shake for 30 seconds. Strain the mixture through a cocktail strainer into the prepared glass, garnish with reserved lime slice, and serve immediately.
