Vegan Fresca - Strawberry, Coconut & Agave Recipe

Kick back on a Sunday afternoon and enjoy this delicious Vegan Strawberry Coconut Agave Fresca. This recipe was created with the Vitamix 5200 Blender in mind. Made with coconut water, strawberries, lime, agave nectar and ice, your energy level will be kicked up a notch or two! This recipe is easy to prepare and oh-so delicious!

Vegan Strawberry Coconut Agave Fresca Recipe

Ingredients
  • 3 cups (450 g) frozen unsweetened strawberries
  • 2 cups (480 ml) coconut water
  • 1 lime, peeled
  • 2 Tbsp (30 ml) raw agave nectar
  • 2 cups (480 ml) ice cubes
Instructions
  1. Place ingredients into blender
  2. Blend until you reach desired consistency

Please take into consideration that this recipe is made for the Vitamix 5200 Kitchen Blender. If you are using a different blender you will need to alter the instructions to work with the blender you have with regards to the variable speeds and possibly the time needed to process and reach the desired consistency. *Note: This recipe has been written for the Vitamix 5200. If you are using a different Vitamix machine, you may need to make adjustments to the Variable Speed and/or processing time.

This is a super simple recipe for Impossible Blender Pie – with a coconut kick! Try this delicious recipe with these few easy steps. Best of all? No crust to make! The pie makes it’s own crust! How cool is that? Wow – Wow – Woohoo Belnder Pie!

Coconut Blender Pie Recipe - Wow!

Ingredients
  • 4 eggs
  • 1½ c. sugar
  • ½ c. self-rising flour
  • 2 c. milk
  • 1 tsp. vanilla
  • ½ stick butter, melted
  • 7 oz. pkg. flaked coconut
Instructions
  1. Shove everything in the blender (keep a small handful of coconut flakes out to sprinkle on top of the pie)
  2. Blend on low speed for about 3 minutes.
  3. Pour your coconut pie mixture into a greased 9" pie pan.
  4. The Coconut Blender Pie will make it's own crust.
  5. Bake it at 350 degrees for 30 minutes.
  6. Remove and let stand for about 5 minutes.
  7. Sprinkle remainder of coconut flakes on top of pie.
